I can’t possibly be the only one obsessed with Amazon Grocery and their subscribe and save option. It’s kind of like Christmas, since I usually forget what I’ve ordered. Here is the latest:

Organic Whole Wheat Pastry Flour x 2 – surprisingly harder to find in the regular supermarket and ridiculously over priced at specialty stores

EVOO x2

Amazing Grass Organic Wheat Grass Powder- for smoothies, I don’t always want to chew my meals.

Double Boiler- for chocolate melting purposes. Obviously.

Still waiting for my Coconut Oil, it’s a ton cheaper online.

Am I the only one obsessed with buying groceries online?

Happy Mothers Day!

Happy Mothers Day! Hope everyone had an AMAZING day! Every year I spoil my mom rotten, but she indulges me the other 364 days of the year. Confession: I am a typical only child. I’m not spoiled, I’m blessed. On top of the fantabulous gifts I gave her, she also put in a special requests for pancakes. Fact: I can make cakes from scratch, I can roast an entire chicken, but I SUCK at pancakes. I have no idea where I go wrong but it almost always flops. I wasn’t completely thrilled with how these came out, I’m not sure if I put too much brown sugar in the batter or the fact that I forgot the pinch of salt (which does make a difference). My college boyfriend use to put sugar in his pancake batter and it was PHENOMENAL! Either way, my skills are lacking. I did, however, love the blueberry syrup! Simple and sweet.

Super Simple Blueberry Syrup

3 cups fresh or frozen blueberries

1cup brown sugar (adjust for your taste)

1tsp of vanilla extract

Pinch of Xanthan Gum for thickening

Place blueberries, brown sugar and vanilla extract in a medium sized pot over medium heat. Stir and allow it to simmer for about 10mins. Right before serving, add xanthan gum. Stir and Voila! Blueberry syrup.

Thanksgiving 2010

This year I cooked Thanksgiving dinner on my own. I kicked Grandma out the kitchen and made Mom my sous chef. It was hard. I stressed. I was on my feet from 10am-5pm. I loved every second of it and I CANNOT wait until next year.

3-Step Fudge

Do you know Hungry Girl? A few years ago, my college roomies and I tried to figure out a way to have all of our after club treats without gaining a million pounds. You know how it is when you come home from a night of under age college drinking and you’re starving for absolutely no reason (don’t get all high and mighty on me now)? I purchased this cookbook after stumbling across the Hungry Girl website. It sat among my collection of cookbooks for practically forever until a few days ago when I was hit with a huge chocolate craving. How can you possibly go wrong with chocolate. Hungry Girl calls it Chocolate Peanut Butter Fudge. I call it simply delicious. I was skeptical at first about how the pumpkin would work in this recipe, but trust me, you won’t taste it at all!
